The SIU Fermentation Science Institute launched a little more than 10 years ago. Since that time, the program has not only taught the science of brewing beer and wine making, but has taught students about other fermentation science ideas like yeast and food production, and even biomanufacturing.
Students need to complete a hands-on field experience in order to complete the program. One of the major hurdles has been trying to help students who need to work while taking classes so that they can provide for themselves. The fermentation science institute is in the first semester or working with St. Nicholas Brewing to provide a co-op program for students. WSIU News In-Focus visited St. Nicholas’ DuQUoin brewery to find out more about the program and what he’s learning.
